We really love waffles in this house, and I often make healthier ones from Skinnytaste (Yogurt Waffles) but for special occasions when we like to splurge, I whip out this Belgian waffle recipe. The magic is in the whipped egg whites, they make the batter extra fluffy. I also like that this recipe doesn't really require any extra ingredients I don't normally have on hand, so I can whip them up whenever!
It does take three mixing bowls, wet, dry and egg whites - but the result is totally worth it! I use a hand mixer to get the egg whites nice and fluffy in a jiffy.
