Yogurt Waffles

First I'll talk about this waffle recipe from Skinnytaste.  It uses yogurt in the batter to up the protein content and make them a bit healthier, and honestly they don't feel "healthy" at all, just delicious!  The blender makes it all come together so easily too and makes the batter nice and fluffy.  It's really so simple.

I like to make a double batch because these also freeze awesome.  I put them on wax paper on a cookie sheet flat in the freezer and once they are solid, transfer to a freezer bag and then you can take them out as needed.  I reheat in the toaster oven for that just-made taste! 


Next let's talk about this waffle maker.  I got it for Christmas last year and it's my favorite.  It makes perfect mini Mickey waffles, just like the parks!  They cook evenly and are nice and thick, plus it's double sided so it makes six at a time.  I have three or four other waffle makers, but this has become my go-to since I got it.  If you are a Disney fan, would highly recommend this investment. 



This lightened up waffle recipe makes a Sunday brunch (or really waffles any day of the week) a regular occurrence in our house.  And just look at that smiling Mickey face, who wouldn't want to dig into that?
