Happy National Pie Day! What kinds of pie did you have or make this
past week for Thanksgiving (if any?) This is one of my favorites to make
this time of year because it takes advantage of seasonal fresh
cranberries, and has hints of a pecan pie but isn't so super sweet as a
traditional one.
The recipe uses refrigerated pie dough to save time and energy, but of course
you can make your own if you prefer (I didn't.) Then it's pretty much combine
the other ingredients in a bowl, put them in the crust, and bake it up! Easy
peasy! Fresh cranberries also freeze wonderfully so don't be afraid to
buy a bag for this, or make it any time of year if you have leftovers from
that cranberry sauce!
