Tilapia (Flounder) Piccata

I've been trying to find ways to work more seafood in my diet, but honestly, I'm not the biggest fish fan. I know I like chicken piccata, so when I found this recipe it sounded like a great way to ease myself into more fish. The recipe calls for flounder, but I had tilapia so that's what I used. Otherwise the recipe is as written.
I liked that I had all these ingredients in my pantry already, always nice to not have to buy any additional ingredients! I also recently found RightRice, which is a great lower WW point option for rice to pack in some additional nutrients into a meal. I started with the variety pack, and the lemon pepper sounded perfect to compliment this meal! I also adore the little mini bottles of Barefoot for cooking. They are perfect to not have to open a whole bottle when a recipe calls for a bit of wine.
Honestly this was so easy. I set up a quick dredging station while I had the water heating for the rice. Got that going and then was ready to pan-fry the fishes. I stirred in the rice to the boiling water and set aside, it's honestly so quick and easy to make!
In no time at all everything was cooked up. The fish cooked beautifully and I made the sauce in the pan while everything rested. The only downside I had, is there wasn't enough sauce! I topped my fish with the fresh parsley and a lemon wheel and dug in. This was actually so quick and easy, I was able to make it fresh on my lunch break.
