I was in the mood to try something new over the weekend and had this recipe stashed away for a rainy day. I hunted down the secret ingredient, Flying Cauldron Butterscotch Beer, which I was able to find at a somewhat close liquor store. I pulled out the rest of my baking supplies and got to work.
The recipe started by creaming together butter and sugar, which is how I start
cookies so I was intrigued. As I continued to add the wet ingredients,
the soda was the last one and it made the batter get kind of chunky looking?
It was very unappealing looking but subsided quickly once I added the dry
ingredients.


Once all combined I put it into my silicone Bundt pan and baked it away!
My poke stick came out clean and it looked beautifully golden brown at the recommended time,
but it was deceiving. After letting it cool a few minutes, when I
turned it out onto a cooling rack it turned out the center was still raw! I
quickly assembled it back together and put it back in the oven for another
20 minutes before it all seemed to be cooked. Once it cooled again I
made the very simple glaze and plated it all up.
I was able to salvage the cake in the end after my baking woes and it was good overall. A little dense but as a pound cake I expected that. However, I was really missing the butterbeer flavor. It just tasted like any old cake, but I wanted to be transported to the Wizarding world!
