Broccoli Grilled Cheese and Tomato Soup

Cold winter days cry out for the comfort of a nice warm bowl of soup and a toasty sandwich. This twist on a classic was something I knew I had to try. First, I started by making the tomato soup. This can be prepped in advance easily. It came together easily enough in my Dutch Oven with fresh ingredients.
With my handy immersion blender, the soup was pureed to a familiar color and consistency. I set two portions aside for my grilled cheese lunch, and froze the other four in individual servings for later.
Next up we had the grilled cheese. What makes this sandwich special is the sauteed garlicky broccoli that goes in. It ups the veggie factor but also the flavor! I was actually so impressed with this simple addition to the classic sandwich.
It all came together beautifully. The soup was a nice touch with the sandwich, but we found it very bland on its own. The sandwich was definitely the star here. I would make the sandwich again but not so sure on the soup without some other tweaks to amp up the flavor a bit.
