Skinnytaste One and Done is one of my favorite cookbooks because one-pot cooking means less dishes, and that is something I love. This recipe has been on my radar for a while but I just never quite made it, but all that changed when there was a sale on rotisserie chicken last week.

Aside from chopping some onion, celery and parsley, this recipe is pretty much just throw it all together which is great.  


A bag of frozen mixed veggies really helps cut down on the prep and is a nice cheap ingredient to bulk up the nutritional value in this meal.  A win-win! 


Then the chicken broth starts to bring it all together.  It smells so good at this point! 


It was easy enough to roll out some pie dough thinner to cover the whole pan, but I didn't bother crimping it or really doing much to make it fancy at all.  It was just big enough but did shrink a little while baking.  


Mine only took about 20 minutes in the oven and it was beautifully golden and ready to go.  It's a little sloppy when you scoop it out, but isn't most comfort food?  Yum!  I loved this dish but would probably serve it with a side salad next time to round out the meal.
