With Valentine's Day on a Monday this year and the Superbowl the day before, time to make something cute was scarce.  Cake mix cookies are such a lifesaver when days get too busy but you still want a fresh baked treat, so I turned to this easy recipe to make something Valentine's ready.  You can see a Christmas version of this at my blog post here (and do that one with Valentine's M&M's to suit the occasion!).  

Red velvet seemed like a no-brainer for a holiday full of red and pink galore.  But my go-to mix in of M&Ms just didn't feel right for this occasion, plus I'd run out of red and pink M&Ms already with Galentine's the day before.  I normally love red velvet with a cream cheese frosting so I decided to do some white chocolate chips to give similar vibes.

Ingredients:

1 Box Red Velvet Cake Mix 
1/4 cup All Purpose Flour
2 Eggs
1/2 cup Vegetable Oil
1 cup White Chocolate Chips

Directions:

Preheat oven to 350°F.  Prepare cookie sheet with parchment paper or silpat.

Combine cake mix, flour, eggs, and oil in medium bowl. Mix until combined.  Dough should come together to a thick consistency and be shiny

Stir in morsels. Drop by medium cookie scoop onto prepared baking sheets 2" apart.

Bake for 10 to 14 minutes or until firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Just a handful of ingredients and one bowl is all you need.  No fancy mixer required! 


The dough turns a deep red as it all mixes together.  


The cookie scoop is the key to perfectly portioned cookies. My go to cookie scoop for these is OXO Good Grips Medium Cookie Scoop.  Scoop them out, bake them up and let them cool for a tasty treat!
