Bone-in chicken thighs were on sale so I was looking for something new but easy to do with them.  I had everything else for this chicken cacciatore recipe on hand, so figured it was the perfect way to try something new.  


The recipe states you can skip this step, but from my experience browning the meat first always makes for a tastier dish, so I went ahead and browned it on the stove before throwing it into the Crockpot.  

After that step, it is really just dump and go.  It doesn't get too much easier than that!  


I served this over some whole wheat pasta and topped with parmesan cheese.  The chicken meat fell right off the bone which made it so easy to eat and a lot more kid-friendly.  Delightful and easy, this will definitely be going into our regular rotation. 


I received these new pasta bowls as a Christmas present and thought they were perfect for this dish. They are elegant yet sturdy. They hold so much so can easily do double duty as a serving bowl as well.  So great!
