This hearty chowder is a great way to get people on board with soup as a whole meal. The chunks of potatoes and corn add nice texture variation and you don't even know there's cauliflower hidden in there thickening it up.
There is a little work to this because you need to cook the bacon first, but then you get to sautee the veggies in the bacon grease which adds a great depth of flavor. I like to dice the potatoes really small so they are similar in size to the corn kernels, and then you have to take out the cauliflower, some soup and some corn and blend it in a blender before putting it back in. But it is totally worth it!
We meal prepped this so we ended up stirring the bacon right in so we didn't have to deal with an extra step when serving it up. Delicious!
