Back from our honeymoon I knew I wanted something light yet cozy to start back on some healthier eating habits after endless food at the cruise buffets! I had a bag of baby carrots in my fridge and everything else for this recipe is something I normally have on hand, so I figured I'd give it a go.
Once I was through chopping, it was so easy to just throw it all in the Instant Pot. Turn it on and we were good to go!
I used my immersion blender right in the Instant Pot to puree until smooth. I missed a few carrots and the hubby actually said he liked the chunks of carrots in there, so next time I might cut up a few, remove them for blending, and then leave them in for more texture.
Overall this soup was great and perfect with some crusty bread to round out the meal. I loved the warm ginger against the carrot. The sour cream gives the soup a nice body without a ton of extra fat or calories. We will definitely be making this one again!
