Holiday Fruit Bars

These are another semi-homemade shortcut kind of a cookie.  Look, I had a lot going on this December and needed to take a few shortcuts to get cookies made.  It happens, and it's totally fine!  This cookie starts with a sugar cookie mix base and then you layer it with canned pie filling for a super easy holiday treat. 

The dough comes together easily, adding a few extra bits from the recipe to make it have a homemade taste really pays off.


Then you layer: cookie-pie-cookie.  Here's where I would change this recipe in the future.  I would do more like 2/3 of the dough on the bottom of the pan to provide a more stable base for the pie filling.  Then use the remaining for the top. 


It baked up beautifully anyway, and the house smelled delicious while it baked.


However, they didn't do a great job holding their shape and were quite messy to eat.  That's why I'd make a thicker bottom next time to try to give it a more secure base when cutting them into bars.  Messy or not, they made a great addition to this holiday party cookie plater (the other two recipes were posted in the last two days!)


You can try this with any pie filling flavor, but personally I loved the cherry with the almond.  What flavor would you use?
