Cranberry Orange Biscotti

I'm seriously a sucker for cranberry, so I'm always looking for new ways to use them and this recipe was no different.  Plus, I thought a biscotti would be a nice change of pace for a cookie tray with a different shape and texture than a lot of the other cookies I typically make.  

Biscotti start out in the same typical cookie fashion, start with your wet ingredients.


Then add in your dry and any mix ins. 


But then it differs when you get to the baking portion. You create two loaves and bake them off.  


You then cut the loaves into slices, creating the signature biscotti shape, and bake them off again.  


These are great with coffee or tea! They aren't too sweet and have a nice zing from the cranberries and freshness from the orange as well. These also freeze beautifully once baked as you prep for the holiday baking season.  They were a great entry into the world of biscotti and I'd definitely make them again.
