So let's start with what's really great about this recipe, you can prep everything and toss it in a freezer bag for a quick and easy future meal.  Love that for this winter season!  Chicken and wild rice soup is one of my favorites, so I was so excited to find this recipe and for how easy it comes together.  I doubled it and threw half right into the Instant Pot to make now, and half into the freezer bag for a future meal. 


The veggies look so beautiful in the pot all ready to cook up!  But let's get to what we thought wasn't so great about this recipe.  First, I had to order a 5 pound bag of wild rice off Amazon, I couldn't seem to find it locally so now I have a LOT of wild rice which was really just more of a nuisance than anything.  The second issue was really the big one, when the soup was done, it was just so bland.  We found ourselves adding a ton of salt to this recipe once we served it up.  When I portioned up the leftovers, I added poultry seasoning and more salt which did help, a lot.  I'm going to season the chicken with salt and pepper prior to cooking it next time and add poultry seasoning again.  I will try it again because I want to love it, but definitely kick up the seasoning!  Also, this doesn't prevent me from recommending this cookbook, everything else we've made from it has been amazing!
