Apple Butter Snickerdoodles

Growing up in the northeast, apple butter is something I love dearly.  So when I found this recipe I was so excited to give it a try.  Finding apple butter in Texas proved challenging, but I managed to get some delivered and we were on track.

The dough came together easily enough and tasted delicious so I was optimistic for the results once I baked these up.

I used a small cookie scoop for uniformity and silpats to ensure they didn't stick to the pan.

They baked evenly and nicely to a golden color, with a signature snickerdoodle look.

I served them up for Friendsgiving as part of our dessert table but they were unfortunately not a favorite.  All the flavor that was in the batter somehow dissipated in the baking process, they ended up quite bland.  If I made them again I'd up the cinnamon and possibly salt content, or perhaps it was just the quality of apple butter you can find in the south?  I wanted to love them so much, but will probably stick to more traditional snickerdoodles in the future.
