Who is ready for Christmas in July? These lemon sugar cookies are the
perfect treat to celebrate! I adapted this classic sugar cookie recipe
to brighten it up with some lemon which makes it perfect for summer.
Ingredients
2 3/4 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon baking powder1 cup softened butter1 1/2 cups white sugar, plus additional for rolling2 tablespoons grated lemon zest1 egg1 teaspoon vanilla extract1-2 tablespoons buttermilk2 tablespoons fresh squeezed lemon juiceSprinkles or colored sugar, for decorating
Directions
Preheat oven to 375 degrees F.
In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl of a stand mixer, cream together butter and sugar until smooth. Beat in the egg, lemon zest and vanilla. Gradually blend in dry ingredients. Add the lemon juice and enough of the buttermilk to moisten the dough and make it soft, not wet.
Roll rounded teaspoons of dough into balls and place in bowl of sugar/colored sugar. Roll cookie dough in sugar until covered. Place on ungreased cookie sheet. Bake for 8 to 10 minutes or until slightly golden.
Let stand for 2 minutes before removing to cool on a rack.
