This cheese-stuffed meatloaf is a sure-fire way to convert beef-lovers to the turkey meatloaf club. While rolling a meatloaf jellyroll style might be intimidating, it really isn't too hard so I encourage everyone to give this recipe a try.  We made this recipe for Sunday supper and got rave reviews from the entire family.  

Aside from the rolling part, this recipe is actually pretty simple, sauté some shallot then mix everything together in a bowl. We do change the recipe just slightly by using BBQ sauce instead of ketchup.  We love the flavor it adds and it swaps one for one in the meat mixture and the glaze. 

The meatloaf looks unassuming when it comes out of the oven, but once you slice into it you get the beautiful pop of gooey cheese and bright spinach. We served it with some simple sautéed asparagus and baked sweet potatoes to round out the meal.
