Paprika Chicken Stew with Dumplings

Happy National Comfort Food Day!  As the weather turns colder, we turn to more comforting meals, but that can also hurt our waistline a bit, so this paprika chicken stew from Skinnytaste had all the makings of a great meal to balance healthy with comfort, unfortunately it just missed the mark for us a little bit. I'd try it again but amp up the seasoning a bit. 

Some delicious bell peppers sautee in a Dutch oven to get us started. Then we add the chicken and let it simmer away.  It smells so good! 



I then remove the chicken in order to make the dumplings in the stew to infuse the flavors into them. Because I made so many portions, I did overcrowd the pan a bit, so be careful if you are serving a crowd and make them in batches.  


The chicken is moist and tender, just needs a bit more flavor.  The dumplings are light and airy and oh so delicious!  Overall this is a great winter meal, just don't shy away from the seasonings on the stew.
