This one pan (or two pan in our case) meal comes together easily and pleases
everyone at our table. you chop the veggies, combine the meat, toss,
shape, glaze and bake. It's really that simple. I always swap
ketchup for BBQ when I make meatloaf, but otherwise we make as written. And
honestly, I really prefer free form meatloaf, I find it gets a much better
texture this way!
Once they come out of the oven the veggies are roasty and the meatloaves are dark and beautiful. They just make you want to dig right in.
The fresh roasted vegetables are tender but still just a little crisp and the flavor is so good it's easy to eat your veggies, and then the BBQ sauce flavor really makes the meatloaves so savory. Eat them as is or add your favorite mash to round out the meal.
