When I think of November I for sure think of fall, football, and PIE! So I was a little surprised to hear that National Cake Day falls on Thanksgiving. But here we are, and who am I to judge national food holidays?
Vanilla can be such an intimidating flavor to focus on when making a cake, because there's just no
where to hide. This cake and frosting recipe from Liv For Cake made it
so approachable to make a vanilla cake with vanilla frosting that wouldn't be
too boring and would impress a crowd.
I loved that this recipe didn't use cake flour, as that is just one more thing
to clutter up the pantry. Even with all-purpose flour, this cake came
out tender and delicious.
The Swiss Meringue Buttercream is a little more advanced of a frosting
technique, but it balances the vanilla flavor so nicely and definitely elevates the cake overall. Everyone was raving about the frosting on this one! I threw on a few rosettes
and sprinkles to liven it up (similar to the picture on the original recipe,
but using the sprinkles I had on hand.) Then we put on the candles and did
traditional birthday things. I venture that this cake will be requested
again in the future :)
