Pork chops and applesauce are a pretty classic combination, and this stuffed pork loin with Moroccan spices really elevates that combo to a new level. The warm spices pair so nicely with the sweet apples, and make this a great fall or winter dish.  


Stuffing a pork loin is definitely a bit more of a complicated meal, but the instructions in the recipe from Skinnytaste are really helpful and make it very approachable.  The filling keeps the pork moist and gets the flavors throughout every bite. And just look at how lovely it is all sliced up!

We paired it with this spiralized winter veggie gratin which is a great way to get picky eaters to try some new veggies since they are all mixed together and topped with cheese. It does take some time to spiralize all the veggies but the end result was a fun veggie side we all enjoyed. If you want to keep the meal gluten free, dairy free, Whole30 or Paleo, this side dish isn't your best choice, but it would also be great served with some roasted veggies!
