Pulled Pork with Homemade BBQ Sauce and Quick Cabbage Slaw

Sweet Potato Fries


Pulled pork is a comfort food classic here in Texas, but it is typically terrible for you.  This trio of recipes goes wonderfully together to knock some major calories or WW SmartPoints off this sandwich.

First up is getting the pork going.   This is a simple prep so it's easy to throw in the cooker in the morning before work or at lunchtime.  It's just putting the pork in, and then sprinkling a few seasonings on top.

While that works, we have time to make the BBQ sauce.  I was a little intimidated to make my own BBQ sauce but that fear was not warranted.  This was suuuper easy to make and the flavor definitely beat out the other low calorie or sugar free BBQ sauces from the store that I have tried.  There's quite a few ingredients, but I typically have most of these things on hand so it wasn't too big of an ask to use so many things.

Finally, I throw together the Quick Cabbage Slaw.  I never liked coleslaw growing up but have found these light oil and vinegar slaws to be awesome to add a bit of crunch and freshness to something like a pulled pork sandwich.  I've made it quite a few times now and it's a great balance to have on the sandwich or the plate. 


I throw some frozen sweet potato fries into the air fryer to round out this meal, but you can definitely make your own if you'd like.  When I can't find healthier buns, I've also done this open face on some light whole grain bread.  Delicious!
