I'd been wanting to try this recipe for a while because it just sounded so comforting, and I'm so glad I did! The big and soft did not disappoint, and they came together easily. First up, the molasses in the batter just always makes me happy as it gives it a beautiful dark color and smells so good as it mixes up.
After you add the dry ingredients, the batter comes together thick and fluffy. I used a medium cookie scoop to get the "big" size, added some orange sugar to my granulated sugar for rolling to give them a fall vibe, and baked them off.
I made these for Friendsgiving this year but they would also be a great addition to a Christmas cookie tray! Do you have a favorite ginger-based cookie recipe to share? I'd love to try more!
