Fresh cranberries are one of my favorite things about this time of year, but they come in such big bags. How much cranberry sauce did you really make and eat this Thanksgiving? I like to keep on the cranberries after their time in the spotlight. Adding cranberries into banana bread gives it a new dimension with the tartness of the berries balancing out the sweetness of the bananas so well. It also is the perfect way to change up your banana bread routine for fall!
You do have to cook the cranberries before adding them to the bread, which adds an extra step. But it was totally worth the small bit of extra effort for this. It comes out moist and decadent while still being light enough to enjoy on your WW plan.
I love making banana bread into mini loafs for easier freezing or just because they are cuter. I used a fall mini loaf pan from Nordic Ware to give these a fall twist too!
