Asian Turkey Meatballs with Gochujang Glaze

Meatballs are one of my absolute favorite things, and I find they hold up so well to meal prep so I love finding different flavor profiles to try out.  These ones are Asian inspired and made with ground turkey which has been on sale quite a bit here.  

As with most Asian inspired dishes, there's quite a handful of ingredients.  If you cook these flavors semi-frequently, you'll likely already have these on hand.  I love the ginger in the squeeze tube, it lasts longer than fresh and is just so easy to use! 


Everything just goes in a bowl and you mix it all up.  I try to be very careful with meatballs and mix them as little as possible to get everything together, it helps keep the best texture once cooked. 

I use a medium to large cookie scoop to keep everything evenly sized. 


Once they bake up you brush on the glaze and broil them for just a minute or two.  I packed them up with some jasmine rice and spicy green beans for meal prep lunches for the week.  They reheated wonderfully and held up really well!
