Strawberry is one of my most requested flavors of cake to make for birthdays, so when I found this recipe that didn't use any artificial flavorings, I knew I had to give it a try!
The key to this recipe is the strawberry puree for the batter and then freeze dried strawberries for the frosting. When I made this, I ended up with way more strawberry puree then I really needed. I probably could have done about half as much and been just fine. It's so beautiful as it stirs into the batter and gives it that pop of strawberry goodness.
I didn't use any artificial colorings either, but you could add a little pink to the batter to keep it a little pinker throughout the baking process.
These turned out just lovely and the strawberry frosting was the perfect way to double down on strawberry goodness. I would make a little more frosting next time, as I didn't have enough left to do any kind of decorating or extra bits so I felt like the cake ended up a little on the plain side.
Looks amazing! Strawberries can be hard to bake with so this recipe is perfect.
