Slow Cooker Mac and Cheese

Mac and cheese is absolutely one of my favorite comfort foods, and I love to make it homemade.  But sometimes it can be so labor intensive to get that mac and cheese casserole going, so I love that this recipe does all the work in the slow cooker while I can do other things! 

I did adjust this recipe from the original to make it slightly more WW friendly. Here are the ingredients I used, otherwise followed the recipe as directed.

8 ounces elbow macaroni
1 cup 2% milk
1 12- ounce cans low-fat evaporated milk
2 ounces reduced-fat cream cheese, (diced)
1 cups cheddar cheese, (grated)
3/4 cup mozzarella cheese, (grated)
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1/4 teaspoon paprika
1/4 teaspoon ground mustard
1/4 cup Country Crock/Margarine

With these changes the recipe comes out to 10 SP on the WW Green Plan.  

So maybe it looks a little messy since it's all stirred around in there, but it's so tasty!  Look at that cheese pull. *drools*  This recipe comes out so well with so little effort.  It's creamy, the pasta isn't mushy, and it has that good punch of cheese. 


We served this with some grilled chicken and veggies but you could just serve it with a side salad to keep it vegetarian or a meatless Monday meal!
