This recipe is deceptively easy and full of flavor. You can make it Whole30 by omitting the wine and it is also gluten free, dairy free, and Paleo which makes it great for so many different diets. This all comes together in one skillet, but you do have to move things in and out of it so it does make a handful of dishes. Totally worth it though.
Cooking the green beans in the skillet sauce gives them such a great flavor while keeping them crisp-tender which is just how I like them. Kids seem to like them this way too so it is a very family friendly recipe as well. The bacon makes it feel indulgent but this recipe is also super WW friendly at only 3 SP on Green and 2 SP on Blue or Purple.
I made some simple mashed sweet potatoes to serve with the dish but you could keep it low carb by going for just the main dish. It is also great with rice if that's more your style. You can make this with any veggie you'd like as well, so it is super versatile and holds up well to meal prep too.
