Korean Beef Rice Bowls

This ground beef bowl might not seem like much, but Korean beef packs such a punch of flavor and is surprisingly easy to put together.  If you aren't used to cooking this type of cuisine, you might need to buy a few extra things at the grocery store, but since we cook Asian pretty often, we typically have all of these ingredients on hand which makes it great for pantry cooking. 


I usually put rice on first and then do the cooking of the beef and it is usually done around the same time, but if you have leftover rice this can come together even quicker! When packing this up for meal prep, I like to use broccoli so that it can all be stored and reheated together.  If you prefer the cucumber, just put it in a separate container so that you can heat the beef and rice.


I'm not personally a spicy fan, so I leave the additional gochujang topping off my half of the meal prep portions. The recipe also calls for sesame seeds but neither of us are really a fan so again, we just leave those off and everything is still very delicious! I've also made this with Impossible Beef to make it vegetarian and you could hardly tell a difference, so meat substitutes hold up well here if you are trying to cut back on your red meat intake or cooking for vegetarians. 


This recipe is definitely on regular rotation in our house! The beef is also freezer friendly so it's easy to whip up a double batch and have it ready to go for an easy meal.
