There are lots of fried chicken fans in the world, as evidenced by the many fast food chains specializing in just that. However, the classic is of course loaded with fats from the deep fry - this recipe delivers crunchiness without all the extra fat.
Buttermilk marinading of the chicken is the key to juicy and delicious chicken. I highly recommend marinating for at least a couple hours even though the recipe says you can get away with 20 minutes. If you are a fan of spice, you might want to amp up the cayenne in the breading, we keep it to a pinch to keep this family friendly. I cooked them up in my Copper Crisper on the convection setting on my oven to get them even crispier with the air being able to flow all the way around the chicken.
We rounded out the meal with some classic Kraft Mac and Cheese and Parmesan Roasted Green Beans.
Roasting green beans quickly became my favorite way to make them after I first tried it. This recipe is so simple and its easy to toss a pan in the oven with the chicken so they can cook at the same time with minimal effort.
