These cookies require mostly pantry staples, plus some toffee bits for that little extra. The batter comes together pretty easily but tastes anything but basic. For these cookies, you thumbprint them after baking, so if you are looking to freeze these, I would do it at the step where you roll them into balls (just note that you'll need to make the chocolate ganache when you are ready to bake them.)
They come out of the oven like soft little chocolate-toffee pillows. Honestly they'd probably be delicious as-is at this point, but we are going to take it to the next level with some thumbprinting!
This is time-sensitive as you need to do it while the cookies are still warm, before they finish setting, so they will be able to be indented and hold the shape. I used a small metal measuring spoon for mine. It was a quick and easy process.
