Move over tacos, Tuesdays have a new player in town! These chimichangas are a little bit of a labor of love, but they are so very delicious that it's worth the extra effort! We love tacos too of course, but it's fun to mix it up a bit sometimes and this was a great change of pace.
This recipe is made in the air fryer (or oven) for maximum crispiness with minimal additional oil or fat. We actually made this from the Skinnytaste Air Fryer Cookbook, but the recipe can also be found online. This preparation also "hides" healthier tortillas for those who might be a little more traditional about them. When we made these for the kids, they gobbled them right up! They couldn't believe they were healthy and were happy to have them anytime.
The fresh pico de gallo adds a beautiful brightness and balance to the cheesy chicken inside. Of course, if you want to save some time you could always grab store bought too!
