Beef, Tomato and Acini di Pepe Soup

I love the ease of having a few individual portions of soups in the freezer for that gloomy day where you just don't really want to cook but want something comforting and easy.  This soup has so much flavor layered in, it is so good!

The Instant Pot makes it so easy to sauté and prep things all in the same pot which is great for less dishes, but this can also be made in a slow cooker or on the stovetop if you don't have this appliance! You brown the meat and then add the chopped veggies before dumping everything else in, so once everything is chopped there's not a ton of additional prep to do.



After you quick release the pressure, you are supposed to put the pasta in to cook in the soup, but that's not my favorite thing to do if I'm not eating it right away because it always ends up absorbing too much liquid for me.  So I just make the pasta when I'm ready to eat it and add it with freshly grated cheese on top to finish off the dish. If you can't find the acini di pepe, cous cous (pictured here) or any small pasta works really well too!
