I wound up with wayy too much shredded zucchini, and was looking for something new to do with it. Enter these sweet potato pancakes to satisfy my needs! This recipe is Whole30 compliant as well which I do like to work into my regular routine every once in a while.
I used my Cuisinart food processor to shred all my veggies, it is really amazing what that thing can do and it quickly got the job done. The "batter" came together quickly and easily after the shredding, and is only a few ingredients, all of which I had on hand. I fried these up in my skillet, and was able to get 3 at a time in the pan. I did need to add some coconut oil for the second fry, the bacon grease didn't quite last (but still gave so much delicious bacon flavor into these guys!)
The recipe says it makes ten but I wound up with eight. Two of these beauties (at the size I created) calculated to 7 SmartPoints on WW Green. A delicious and filling breakfast!
