Happy National Pancake Day! We often toss blueberries into whatever pancake recipe I'm using for the day, but this recipe was legitimately MADE for blueberries, so we had to go ahead and give it a try.
This pancake recipe uses sour cream which makes for a very thick batter, but a great flavor! If you aren't used to such a thick batter it can definitely be intimidating, but just give yourself a few pancakes to get used to it and they should turn out fine.
These didn't need much to be delicious, but in classic pancake fashion we served them up with some butter and maple syrup.
