Baked Pasta with Goat Cheese & Baby Kale

I'm a huge fan of pasta, so I was excited for this twist on a baked pasta dish that had a nice serving of kale worked in.  However, this recipe missed the mark a bit for us.  While it had a lot of potential, it just didn't come together like I would have wanted.  It stayed a little soupy and there were huge pockets of kale that didn't really blend into the dish so well. Full disclosure: this recipe is written for one serving, and I quadrupled it to have for lunches for the week, so the errors could have completely been on my end. 


If I'm to make this again, I'll be sure to cut the kale into really small pieces so it goes throughout the pasta better since I think that would help the flavors of this a lot. If I make it into a four person casserole again, I'll probably also reduce the milk a little bit to see if that helps it come together better.
