Crispy Skillet Chicken in a White Wine Sauce

I love when a recipe is simple and delicious, and this one fits the bill! Just a few ingredients and a Dutch oven or cast iron skillet lead to a hearty, family friendly dinner.  We doubled the recipe so we used the Dutch Oven for more space.  I left the skin off my chicken thighs to lighten the dish up quite a bit for myself but left it on for the rest of the family who loved it. 


I love that the potatoes cook in the same pot to make things easier and less dishes.  


During the last five minutes of cooking, I threw some sugar snap peas in a skillet with some olive oil, alt and pepper for a green veggie to round out this meal.  How gorgeous is this when it comes out of the oven?  It just looks so inviting.  


We plated it up and have a yummy, satisfying meal.  I spooned some of the sauce over the veggies to tie it all together too. The lemon adds such a nice brightness to the dish.
