I'm kicking off the "holiday" baking by challenging myself to post a cookie recipe every Friday for the rest of the year! I wanted to start with this one because I love that it's just five ingredients and you can make them to suit any occasion by using different colored sprinkles. These were for a birthday, so I went with classic rainbow - but I was super tempted to use some black and orange to get into the Halloween spirit!
These five ingredients are things we always have on hand. If you don't have almond extract, I'm sure vanilla would be delicious as well. They come together easily in a stand mixer and shaping them is super easy so it's a great cookie to start with if you aren't feeling like a pro yet this year.
This recipe makes a lot of little cookies, so I packed some up for the freezer. (You'll see me do this a lot this time of year.) I just put the cut cookies onto a wax paper lined cookie sheet in the freezer for about an hour, then pop them into a labeled freezer bag once frozen solid. They can be baked up right from frozen when you want a little treat!
My fiancé despises sprinkles, so that's why these get knocked down a star, but otherwise they are super tasty, light in flavor and not too sweet. Be sure not to overbake them though, they will be done before they brown at all.
