No Bake Nutella Cheesecake

Pies are always the star of a Thanksgiving dessert table, but since pies are not my favorite dessert to make, I like to challenge that ideal. Enter the no-bake cheesecake, it's sort of a form of pie? But it is so so easy to make! I had a substitution error from a delivery order and ended up with a bunch of Nutella, so when I found this recipe, I knew it was just what I needed to fill the Thanksgiving dessert void.The recipe calls for a pre-made chocolate graham cracker crust. Two issues there: 1) chocolate graham crackers seem to no longer exist and 2) I wanted to use my pumpkin pie pan. I made a simple Oreo crust as a substitute because they are typically delicious and I thought it would be a close substitute.
It's just Oreos and butter, it doesn't even need to be baked, but I did just to be on the safe side.

Then I whipped up the "cheesecake" filling which is just a handful of ingredients whipped together. I used my trusted Kitchen Aid to make easy quick work of it.
Once combined, I scooped it all into my prepared crust and decorated with a few mini chocolate chips and carefully placed fall leaf sprinkles to give it a little Thanksgiving flair.
Pop it in the fridge to chill for a few hours and you are good to go! Make sure it stays in the fridge until you are ready to dig in, or it won't keep the firm texture.
