Since moving to Texas I've really found a love of enchiladas, but going out is not great on the waistline and enchiladas take time to roll.  That's why this enchilada bake is now a regular for me, all the deliciousness of a chicken enchilada, but much better for you and half the work!


This all comes together in a cast iron skillet for an easy one-dish meal.  I love the cast iron skillets from Lodge because they are so reasonably priced and definitely get the job done.  I use the 12 inch one most often when I cook.


The cheese on top really completes the dish.  In my world, you can never have enough cheese!


I topped with some fresh cilantro when serving to give it a pop of color.  This would be great with a southwest salad on the side to round it out.
