I love quinoa as a casserole base and find it to be so underrated. It packs a proteins punch and holds up great for meal prepped recipes. I love the flavors of caprese but do prefer my tomatoes cooked typically so this recipe was right up my alley. You start by making a basic tomato sauce from scratch. Super easy and I always impress myself when I make a sauce from scratch.
Next we combined the cooked fluffy quinoa and some cooked shredded chicken to get everything evenly distributed. Combined the remaining ingredients into a casserole dish and into the oven it went!
Overall this was a nice hearty lunch for the week and I quite enjoyed it. The fresh basil is definitely a must but we didn't have quite enough because it has been hard to come by lately. I can't wait for our herb garden to get going so I don't have this problem for a few months!
