General Tso's Chicken

General Tso's is my go-to Chinese takeout dish, but it's of course loaded with fat and calories so I try not to indulge too often. This recipe from Skinnytaste is such a great swap, and leaves the takeout in the dust! It's easy to whip together, you just stir together sauce ingredients (most of which I have on hand at all times) and cook some chicken in a skillet. Then combine them and let the sauce thicken up. Yum!
We made some white jasmine rice and some frozen "Asian style" vegetables to round out the meal. A perfect meal for a busy weeknight or for meal prep!
