I'm always looking for more interesting ways to eat eggs since they are a zero point food for me and just a great healthy breakfast choice. I shredded my sweet potatoes in my food processor to make things as easy as possible. Everything else came together quickly once that step was done.
I started making my little sweet potato cups but found I couldn't use as much of the sweet potato mix as called for without basically completely filling my muffin tins, so I ended up making 11 instead of the 6 the recipe calls for.
I did the 12 minute bake time in my toaster oven for the nice runny yolk, and then I reheat them in the microwave for about a minute each morning as I prepped these for the week. Since my cups were smaller, I have two each morning and some fruit to round it out. Delicious!
