Lemon Snowflakes

I think it's time for another quick and easy, no mixer required cookie.  While this recipe calls for lemon cake mix, I've also made it with red velvet cake which has turned our great as well.  I knocked off a star because the batter is really sticky and messy to roll in the powdered sugar, but overall these cookies come out light and airy, like little lemon pillows. 

This is another cake mix shortcut cookie, and only requires four ingredients total so it comes together in no time. 



Once the cake mix, Cool Whip and egg are mixed together, you take balls of dough and roll it in powdered sugar.  This step gives it that snowflake look when baked but is also quite messy.  Our dough was very soft and sticky.  If you have help, this went much faster with two of us working on it!


The cookies spread quite a bit while baking, so make sure you give them plenty of room on the cookie sheet. 


The Cool Whip makes these cookies so light and fluffy, it is hard to have just one!
