Christmas Mint Cookies

These Christmas mint cookies will remind you of a Girl Scout favorite but you can make them anytime of year and don't have to hoard boxes in your freezer!  They come together with just three ingredients, or four if you use sprinkles (which of course, I did!) The peppermint oil was a little hard to find, but once I did you only need a few drops so it will last quite some time. I love these sprinkles from Fancy Sprinkles to elevate the decorations on my cookies. They also don't require any baking at all. 


You simply melt chocolate (I used semi-sweet), stir in peppermint oil, and dip the Ritz crackers into the mixture.  I sprinkled on my Wintergreen Fancy Sprinkles before the chocolate set so they would stick in nicely. These sprinkles are actually peppermint flavored so I thought they would be the perfect addition to these cookies.


Once your tray is done, stick it in the fridge to fully set and then you have these delightful cookies.  I love how light and crispy they are but pack a great chocolate-mint punch.
