Are you counting down to Christmas? It's crunch time now, and to lead up to the big cookie event I thought it was a great time to upgrade cookie Friday to cookie week! I want to start with something quick and easy that you can fit in between all of the other holiday prep.
I was going to be baking while on vacation so I was looking for some shortcuts to make my ingredient list a little shorter and simple recipes since I wouldn't have all my kitchen gadgets at my disposal. I found this recipe for Cake Mix Cookies and it fit the bill so I knew I had to give it a try!
You can make this recipe with any combination of cake flavors and mix ins, but I had some holiday M&Ms on deck so I decided to go with double chocolate M&M cookies using Triple Chocolate Cake mix. In addition to those things, you only need eggs and oil, which was perfect for my needs.
No need for electric mixers here, it comes together easily in a bowl with a spatula.
I used a cookie scoop for nice even cookies. You bake these on parchment to avoid sticking and it made removal to the cooling rack so easy.
Once cooled, I plated them up to serve. They were a huge hit and no one was any the wiser to my shortcuts. They were fudgy from the chocolate and almost brownie-like.
