This recipe is a classic in our house, having it requested every Christmas
but is great any time of year. Fair warning, this recipe makes a LOT
of cookies, but it also freezes great so I always make a full batch anyway.
To make my peanut butter cookies a little special, I use cookie stamps from
Nordic Ware. I find simple patterns to work best with these because they do
crack a little and have the chunks of peanuts in them. I used the Geo
Cast Cookie Stamps as well as the All Season Cast Cookie Stamps for these
patterns. If you don't have cookie stamps, you can of course make
these the classic way with a crisscross fork pattern.
To freeze these cookies, I stamp them out first and then flash freeze on a
cookie sheet. Once they are hard, I transfer them to a freezer bag for
future baking.
I love how nicely this dough comes together, and once I pick up some crunchy
peanut butter (we are smooth people in this house) I have everything else on
hand which is always nice.
These lovelies also hold up well to shipping if you want to make them for the
holidays and share the love.
