I wanted to try something a little classic for St. Patrick's Day, so I gave these two recipes a try.  The Instant Pot Corned Beef and Cabbage turned out really well for what it was, I just don't think I particularly like corned beef.  It was super easy to put together, and the beef came out tender and juicy.  


The Irish Soda Bread Muffins were much more up my alley, however they came out just a bit dry for my liking.  I will definitely try to remake this recipe again in the future to try to get it right.  They were a great little treat with dinner and great for breakfast the next day.
