Rice Krispie Treats

Happy New Year!  A lot of January focus tends to be on healthy eating and "resetting" after the holidays (and you'll see healthy recipes here from me too!) but I believe in everything in moderation! Rice Krispie Treats are one of my favorite easy recipes to go to when the craving hits.  I've adapted the recipe just slightly from the original to make it more to our taste, but you can definitely get a lot more creative here too!  This is a great treat to make together with the family as well, and everyone is sure to love the results :)

Rice Krispie Treats

Ingredients:
4 tablespoons butter
1 package (10 oz., about 40) JET-PUFFED Marshmallows
6 cups Kellogg's® Rice Krispies® cereal

Directions:
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add Kellogg's Rice Krispies cereal. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Ensure mixture is pressed firmly into the pan. 
4. Cool. Cut into 2-inch squares. 


The secret is the additional butter, it gives an extra richness to the flavor.  It's also preferred to use the large marshmallows, not mini. It still comes together so easily on the stove.  Make sure you grease the pan and the spatula to get it all pressed in.
