White chicken chili is one of my go-tos this time of year since it is comforting, filling, and relatively healthy (if you don't look at how much cheese I put on top!) It is also super easy to make which is a win with so much holiday cooking burn-out lately.
The recipe is literally put all the ingredients in the Instant Pot, turn it on, let it do it's thing - you have a meal! You can even cook it right from frozen if you don't have time to thaw your chicken, one of my favorite Instant Pot perks!
The basis of this recipe is great, but we knocked off a star because we really felt it was more like a soup than a chili - which is great if that's what you're going for, but the name of the recipe just didn't set up expectations for that. I'd add more beans in next time or less broth (or maybe a bit of both) to make it a bit more of a chili consistency but otherwise this recipe was wonderful!
